See-Meh-Rah | from Spanish, meaning “Summit” or “Peak”
Perched atop The Source Hotel, Cimera is Denver’s rooftop escape for vibrant Pan-Latin flavors, bold cocktails, and sweeping mountain views.
The vibrant menu is a collaboration between Chef Diego Muñoz, the internationally acclaimed Peruvian chef celebrated for his refined approach to Latin cuisine, and Chef Geoff Cox, a Colorado native whose deep roots in Denver’s dining scene bring local authenticity and warmth. Together, they unite Latin tradition, creativity, and the spirited energy of the Mile High City.
Cimera blurs the line between indoors and out—offering open-air patio dining and a lush, mural-filled space that melds the neighborhood’s artistic pulse and Latin America’s colorful spirit.

Pan Latin Cocktails & Cuisine
At Cimera, every dish tells a story of Latin flavor, culture, and innovation. A collaboration between Peruvian Chef Diego Muñoz and Chef Geoff Cox, the menu is a vibrant mix of shareable small plates and bold entrées that are perfect for dinner, or grabbing drinks and a bite.
Inspired by flavors from across Latin America, Cimera showcases Peruvian-inspired sushi and sashimi, Colombian arepas, and Mexican tacos, among other favorites. A nod to Nikkei cuisine — the fusion of Peruvian and Japanese traditions — brings delicate technique and vibrant flavor to the table.
Live-fire entrees, regional specialties, and inventive vegetable plates highlight locally sourced ingredients from Cimera’s scratch kitchen. Paired with artful Latin cocktails, the experience is a celebration of Pan-Latin culture and cuisine.
Latin Soul, RiNo Vibe
A custom mural by Mexican artist Aaron Petz ties Cimera to the creative heart of RiNo — a colorful, story-filled piece that wraps the dining room in scenes of mountainside villages and community life. It’s vibrant, joyful, and captures the spirit of connection that defines the neighborhood and the restaurant.
Our Chefs
The culinary ethos at Cimera is defined by globally celebrated Peruvian chef Diego Muñoz, known for his innovative approach to Latin American cuisine and its intersection with global flavors. He is joined by Executive Chef Geoff Cox, a talent with deep roots in Denver’s culinary scene.
Chef Diego Muñoz
Diego Muñoz is a renowned South American chef whose journey reflects a deep respect for culinary heritage and local ingredients. Born and raised in Peru, and with a career path that started abroad, he combines a solid technical foundation with a consistent passion for exploring indigenous Peruvian ingredients, creating a unique fusion of modern Peruvian and global cuisines.
His mantra encapsulates this ethos: “Cooking does not start when you light a fire... it begins in the land, in the sea, in the man that links you to them.”
Chef Geoff Cox
Deeply rooted in the Denver food scene, Cox is classically trained and highly regarded for his meticulous research and thoughtful approach, drawing on time-honored techniques such as brining, curing, and fermentation, paired with an emphasis on research and creativity. His culinary philosophy centers around three core principles: technical excellence, seasonal ingredients, and personalized experiences– all in service of creating meals that are intentional, elevated and inviting.
Chef Cox has over 15 years of culinary experience in some of Denver’s top restaurants, most notably a nearly a decade-long tenure at Hop Alley. There, Cox helped lead the restaurant to major accolades including, a James Beard Award nomination, a Bib Gourmand from the Michelin Guide, and 5280 Magazine's list of “Denver’s Best Restaurants” for three consecutive years.
