Perched atop The Source Hotel, Cimera is Denver’s rooftop escape for Pan-Latin flavors, bold cocktails, and sweeping mountain views.
The menu is a collaboration between internationally acclaimed Peruvian chef Diego Muñoz and Colorado native Chef Geoff Cox, bringing together Latin tradition, global creativity, and Denver spirit. From bright ceviches and Nikkei-style sushi to shareable plates, fire-kissed mains, and artful cocktails, every dish and drink celebrates culture, craft, and innovation.

Peruvian-inspired sushi and sashimi, Colombian arepas, Mexican tacos, and live-fire specialties showcase a range of regional influences. A nod to Nikkei cuisine—the fusion of Peruvian and Japanese traditions—brings delicate technique and unexpected flavor to the table. Locally sourced ingredients and inventive vegetable dishes round out the scratch-kitchen menu, paired with artful Latin cocktails.
Panoramic Views, Latin Soul, RiNo Vibes
The Rockies set the backdrop from Cimera’s open-air patio, while inside, the creative energy of RiNo comes to life. A custom mural by Mexican artist Aaron Petz wraps the dining room in colorful scenes of mountainside villages and community life—bringing together Denver’s landscape, the neighborhood’s artistic spirit, and the vibrant soul of Latin America.
