The culinary ethos at Cimera is defined by globally celebrated Peruvian chef Diego Muñoz, known for his innovative approach to Latin American cuisine and its intersection with global flavors. He is joined by Executive Chef Geoff Cox, a talent with deep roots in Denver’s culinary scene.

Diego Muñoz is a renowned South American chef whose journey reflects a deep respect for culinary heritage and local ingredients. Born and raised in Peru, and with a career path that started abroad, he combines a solid technical foundation with a consistent passion for exploring indigenous Peruvian ingredients, creating a unique fusion of modern Peruvian and global cuisines.

His mantra encapsulates this ethos: “Cooking does not start when you light a fire... it begins in the land, in the sea, in the man that links you to them."

Chef Geoff Cox

Deeply rooted in the Denver food scene, Cox is classically trained and highly regarded for his meticulous research and thoughtful approach, drawing on time-honored techniques such as brining, curing, and fermentation, paired with an emphasis on research and creativity. His culinary philosophy centers around three core principles: technical excellence, seasonal ingredients, and personalized experiences– all in service of creating meals that are intentional, elevated and inviting. 

Chef Cox has over 15 years of culinary experience in some of Denver’s top restaurants, most notably a nearly a decade-long tenure at Hop Alley.  There, Cox helped lead the restaurant to major accolades including, a James Beard Award nomination, a Bib Gourmand from the Michelin Guide, and 5280 Magazine's list of “Denver’s Best Restaurants” for three consecutive years.
